Just to support my previous comment with a reference, this encyclopedia link specifically describes 副露 as being either チー (chow), ポン (pung), or 大明槓 (kan #2 in my previous comment). It does not mention the other two types of kan.

There are 3 ways of declaring a kan ("kong")
1. Draw all 4 of the same tiles from the wall yourself ("concealed kan" / 暗槓)
2. Have 3 of the same tiles concealed in your hand and steal the fourth from someone else ("open kan" / 大明槓)
3. Have 2 of the same tiles in your hand, steal the third from someone else, then draw the fourth from the wall later on in the game ("added kan" / 小明槓 / 加槓)

Since #1 and #3 don't involve stealing any tiles from anyone at the moment the kan is declared, the kan is usually not considered 副露. Wikipedia mentions that they can be considered 副露 under a broad definition of the word. This is what Paul was trying to convey with the second sense.

I think this information is too technical and obscure for JMdict and should be dropped.

Was hiragana when I saw it, but katakana seems also common. (in sankoku). I've forgotten if/where that should be included when there are NO kanji.

Sankoku specifically lists harami in the definition.  The delishkitchen entry specifically identifies harasu and harami and as differing because the former is boneless and the latter may have bones.

Usually *not* tuna, which has its own terminology.(とろ: fatty cut (esp. of tuna belly))

Search "harasu" in English, and it's endless salmon entries.

Every reference mentions "fattyness".  We list "fatty" with とろ.  sankoku specifically says あぶらののった. fattiness seems to be a key component.
