The recipes that Jim and I posted below both contain 絹ごし豆腐/silken tofu as an ingredient but others (like the ones above) don't.
Edamame are just green soybeans so maybe that's enough for 枝豆豆腐 to be considered "tofu", but I take Jim's point about the lack of curdling. "Tofu-like" is probably more accurate.
