For 聴く, I'm not sure which option is best but I definitely think 訊く would be better as a separate entry.

That restriction means that only 訊く is used for sense 3, which isn't correct.
The only way to indicate that 訊く only applies to sense 3 is to add restrictions to all the other senses.
A cleaner solution (and what I propose) is to split 訊く out into its own entry which points here. Most of the refs don't include it as a headword, only as a "「訊く」とも書く" note.

apparently あおみどり is an old name for it, so i suspect they've become confused along the way.  あおみどろ could be added

It went in in 2007 because of コレステロール値. We also have コード値 and a heap of other terminating 値/ち examples, even ＧＩ値. Looking on I see データ値, デフォールト値, パラメタ値, バイト値, ヌル値, etc.
I realise that Japanese lexicographers are not treating it as a suffix, but I feel if it's waddling like a duck and quacking like a duck ....

possibly debatable, but no japanese dictionary i possess treats this as a suffix; it's kanwa in all that have it (poss. because it's the on'yomi).  also not in gg5 or eijiro.  suggest it be deleted as kanwa

Quite happy to disconnect 小父ちゃん from おっちゃん. Should おっちゃん go in its own entry? I think it could stay here as a [nokanji], as indeed the new おいちゃん could go here too. Alternatively, おっちゃん could be added to the おいちゃん entry.

I suggest splitting out おっちゃん. I think saying it can be written with 小父ちゃん is a stretch (though I'm sure the version of nikk that was online on kotobank at the time suggested that that was the case). it's not listed in daijs' entry.
