Daijr, GG5 (both mention ほかの物/ほかのもの in their glosses of 他物.) GG5 uses 他の物 in several examples. ほかの物 is in lots of Eijiro entries.

I can see たのもの being used on a few pages, but I'm not sure it's correct. There's a Tanaka sentence: 他の物が漁夫の利を占める.

I think the etymology note is useful.

Given that "wheat gluten" refers to the actual food (and is used interchangeably with "seitan") I think this should be fine.
