Daijirin includes additional senses that don't appear in the other kokugo dictionaries that I'm looking at. Some of those senses are transitive, but I'm guessing that those are the archaic senses mentioned in earlier comments.

I agree we should be consistent. But if English-language sources overwhelmingly favour a particular form, I think we should use it (instead of a standard Hepburn romanization). I'd support reversing the decision to convert all instances of "riichi" to "rīchi". The later is barely used.

As you say, -ず is equivalent to -ないで and simply means "without...".
Contrast with ぬ, which is an older form of -ない and *can* be used prenominally (e.g. 止まらぬ株価下落)
