The natural exemplar of もちもち is o-mochi ricecake itself, which can't be called "springy." Springiness is a quality whereby pushing down on the substance will see it return to its former shape - like drier kinds of sponge cake or popcorn, for example, if we're talking food. O-mochi may be a little "springier" than, say, butter, but I would never style springiness, let alone puffiness, as its primary trait.

As the chiebukuro discussion (above) shows, it's hardly recognized in Japanese, and may indeed be a mistaken/jokey form of めちゃめちゃ or むちゃむちゃ. Also it's pretty uncommon as a 擬態語. I think I'll just drop it, and it can be revived if some authoritative information comes up.

Thanks for posting the example.
Before adding this to the dictionary we need more evidence than just a single example.
The translation "sheepishly" is possible, but so is for instance "mumblingly".
It is a bit confusing that according to the ngrams もちゃもちゃ is often used with 食べる.
I think we should leave this open for a while and see if anyone comes up with something.

In Takemiya Yuyuko's "Golden Time 5", page 68, we find 
the following text:

My current rendering of this is: Kouko was a mere shadow 
of her usual perfect beauty, her face stiff as if 
cramped, but nonetheless she somehow removed the cap from 
the lipstick that Linda had lent her.  Sheepishly, she 
mumbled things like ‘Thank you very much’, ‘I’m so sorry’ 
and ‘I’m being such a problem for you.’  Probably nobody 
caught what she said, though.


As context, the girl Kouko had just made a fool of 
herself in front of everybody with a sort of panic 
attack.

Nonetheless, if you think this one is too rare, that's 
your call.  It's your database, not mine.

I don't think lacinato has a capital. As the third ref above says: "actually it's "laciniato" in Italian, it means leaves with "lacinie", that is sort of cuts in the surface of leaves." We'd only have a capital if it was from a proper name, as in "Tuscan kale."

The existing translations are "black cabbage (leaf kale)," but Googling "black cabbage" brings up only about 370 hits. Lacinato kale seems to be the most common term, with leaf kale also fairly up there. I also added the Italian for it (often used in Japan in katakana), and the botanical name.
