Soba is the Japanese name for usually thinner, usually buckwheat noodles. 2) in my experience, there is often conflation of wheat (a grass) and buckwheat (a cover plant). Buckwheat is not wheat. They're completely different kinds of plants. For that reason, some clarity on this entry seems appropriate. Telling me a noodle is 20% "udon flour" is meaningless unless I happen to believe that udon is always made with 100% wheat flour. |
