It appears that it is also used in the sense that I submitted, although whether that is regarded as incorrect usage is another matter, I suppose:

It seems to be about food texture here, too, rather than substantiality:
この食感!食べ応え…いえ噛み応え十分です [...] 食感は外枠が堅く、中の網目状部分はそれより少し堅さ控えめ、実際堅さは同じでしょうけど構造の違いから、違う堅さに感じますがザクッザクッとしていて1つ1つが十分に食べ応えがあります。
