Comments: | "savoury pancake fried on an iron griddle with vegetables, meat and/or seafood" this makes it sound as if the vegetables and meat and/or seafood might be fried entirely separately from the batter. "topped with various sauces and condiments" if it were the case that people/restaurants frequently put different kinds of sauces and condiments on top, this phrasing would make sense, but it's very specifically mayo and a sauce similar to Worcestershire sauce, aonori and bonito flakes. This is the same whether it's Osaka or Hiroshima style. I don't see the benefit of not mentioning exactly what's put on top. I think it's a shame to not specifically mention the cabbage but just reduce it to "vegetables", when it's a main ingredient of the batter and not normally what you'd associate with a pancake recipe in the West (savoury or not). Again, both Hiroshima and Osaka okonomiyaki have cabbage in the batter. This is a dish that really has no Western equivalent and isn't widely known outside of Japan. |

There's no need to list (or even mention) ぱん because it's merely a rendaku reading. ばん, however, is the only valid reading for 版 (regardless of what comes before it) when used as a suffix in the first sense. Daijr even has an entry for ばん which redirects to はん (版). If I can't convince you to keep it in the list of readings, a note like the one I've written is an acceptable compromise. |
