Looking at the candidates:

Tried and checking with a native speaker but she hadn't 
heard of the word. It's probably ざけ rather than じゃけ - out 
of 8 words on daijs ending in 鮭, 7 are read ざけ and one is 
read さけ (but it comes with an "also -ざけ" note). On the 
other hand, daijr lists 塩鮭 as being read both -ざけ and -じゃ
け.
Not sure where I stand inclusion-wise, it's not a very 
common word and we don't have a definite source for the 
reading.

At the moment that WWWJDIC function doesn't handle kanji outside the JIS X 0208 set. One day I hope to get it fixed, but it's not a very high priority.

Could you make the reading show up in "Text Glossing" then when one enters a text where it appears　in some compound (place name or person's name), such as 嘉琦 or 美琦? :-)
