The dish originated in Nagoya. It's called 台湾まぜそば because it's made with with 台湾ミンチ.
I don't think "mixed noodles" is a helpful gloss. A lot of online hits for "mazesoba".

but the results are all about the Taiwanese dish. Should we add an extra sense or just ignore daijr?
