Both GG5 and the Igaku glossary have "fermentation technology", but I think it's odd. 工学 is almost always "engineering", although I see we have 生殖工学/reproduction technology. |

I didn't know about 発酵学. I would gloss this fermentation engineering, since it's about the study of 技術 and gloss 発酵学 zymology. |

Scott added this because Wikipedia links them. Compare the definitions: "発酵工学とは、微生物を利用して、酒や味噌といった発酵食品を作る技術を研究・開発する学問" "Zymology is an applied science which studies the biochemical process of fermentation and its practical uses."
This seems very similar to me. So even though gg5 has the gloss "fermentation technology", this seemed inaccurate to me. It's a 学問, a science, not a technology. This is backed up by the fact that Wikipedia also links to a chair of 発酵工学. |
