Given that "wheat gluten" refers to the actual food (and is used interchangeably with "seitan") I think this should be fine.
Do we need the etymology note? The 正しい->セイ connection won't be obvious to a lot of people. |

This word refers to a particular kind of meat substitute made from gluten, not to gluten or gluten based food products in general.
Moreover, the term "seitan" is mostly used in the West; in Japan this product is usually called グルテンミート.
There are other more traditional gluten based food products in Japan known as 麩. |
