Why the "(person)"? I can't see how that adjective can apply to anything else.

The present definition is fine for when 猟奇的 is used to describe a person, as in the title of the TV series 猟奇的な彼女 (which was inspired by a Korean movie whose title is translated as "My Sassy Gal").
.
However, 猟奇的 is also used to describe crimes, incidents, manga pictures, etc.

Note the second part of this definition:
[形動]
- 奇怪・異常なものを捜し求めるさま。
- また、そういう気持ちを満足させるようなさま。「―な犯罪」
