In the following text, taken from Seichou Matsumoto's novel 赤い白描, an office worker speaks to a colleague who had been thinking about the pleasant events of the previous evening. It appears that his colleague had been smiling without being aware of it, and he states that being unaware of it is in the very nature of 思い出し笑い. 

「何だか愉しそうだな」
佐久間は葉子に言った。
「そう？そう見えるかしら？」
「見えるよ。さっきから、ぼくは自分の机から君の様子を見ていたんだがね。仕事をしながら思い出し笑いをしていたよ」
「あら、いやだ。そんなことをした覚えはないわ」
「思い出し笑いというやつはね、君、本人には気が付かないで自然に出るものなんだ。つまり、心にしまっている愉しさが、無意識に表情をそう作らせるのだ......何かいいことがあったかい？」
「そんなこと、全然ないわ」
「そうかな？」

I think that typically, an 思い出し笑い is
1) a smile rather than a laugh;
2) done unconsciously (whereas laughing is something one is always aware of doing);
3) a solitary act (whereas the phrase "laughing while reminiscing" strongly suggests that one is chatting with friends or family members).
