I think せうゆ can be dropped. It's archaic and the kokugos don't have it.
しょうゆう is a "dialectal kana" candidate.

Yes, 醬 is another of the 表外漢字字体表 brigade, having made the JIS X 0212 -> Unicode journey. 醬油 is getting about 3% of the Googits that 醤油 is getting, so still rK.

Looks fine for the readings. But 「醬油」 is the headword in newer editions of meikyo, smk, and other kokugos. These also have 「正油」 in their notes.

Proposing a significant cleanup of this messy entry. しょう油 could be [sK] too. 醬油/せうゆ could go in its own entry, although I don't think either needs to be visible.

At first I thought せうゆ might have been 旧仮名遣い for 醤油 but I see that's シヤウ in all the kokugos. せうゆ in fact is not in any kokugos, but the Q/A quoted seems to indicate that it is an old reading - it's an interesting discussion.
We don't usually include 旧仮名遣い but I think せうゆ can probably stay as "old kana".
