Saw this in a menu, then I looked it up online. Not sure if 酒菜 is used for the second sense, so I added a 
restriction.

I'm not sure.  Google hits show that "さかなにする" also quite frequently means 'to have as a side order (to be served with drinks)', 'to have the fish', etc.  The ~にする can be applied to any sense of either of the two entries for さかな, so the さかなにする entry would need to have three senses (or two if it is specified as 肴にする).  I would prefer simply to clarify sense 2 here, but it doesn't bother me to add the さかなにする (if all relevant senses are accounted for).

Aren't those examples really of さかなにする, which is possibly an idiomatic expression.
I feel Winnie's submission should perhaps be revived - someone seeing さかなにする would be hard put to find their way to sense 2 of this entry.
