https://flour.empacede.co.jp/attention/plantbasemeat/ セイタン(seitan)という名前も彼が付けたと言われており、日本語では正蛋、生蛋、製蛋など、いくつか説があります(蛋は蛋白質の「蛋」)

Given that "wheat gluten" refers to the actual food (and is used interchangeably with "seitan") I think this should be fine.
Do we need the etymology note? The 正しい->セイ connection won't be obvious to a lot of people.

I know Johan dropped the "wheat gluten" gloss in favour of the expl, but I suspect it may be more accurate to say "wheat gluten (esp. meat substitute made from it)" or something like that.
