Simplifying and making it more general. I have encountered a wide range of dishes, both in and outside Japan. The history of the Wikipedia page, and the differing usage in and out of Japan is interesting.

even in restaurants お好み焼き aren't always prepared in the middle of the table.

I think it's worth mentionining things like okonomiyaki are included in the Japanese definition as I think in the 
US, a typical teppyanyaki restaurant will only cook steak + accompanying veggies on the teppan
