活き締め/活締め are certainly being used and should get in somehow. It would be a horrible mess to try and get everything into one entry. The かつじめ (mis)reading questions the "[restr=いけじめ]" on sense 1. |

300k+ Google hits for 活〆 – actually looks like most common spelling by almost an order of magnitude. |
|
Comments: |
* Added alt. spelling w/o okurigana
Reading-wise, some possible additions:
* WP also gives いきじめ/いきしめ (き rather than け)
* かつじめ seems a common (mis)-reading (かつ rather than いき 重箱読み instead of 複合動詞 訓読み) and +“活〆“ +"かつじめ" gets 7k+ Google hits.
Background:
Just saw this at grocery store, rendered as 活乄 (on label; I’ve rendered this as 活〆 since literal "活乄" is quite rare online), and clerk read it as かつじめ (admittedly, following my prompting, but seemed surprised at いけじめ after I found it in 国語辞書). |

It was a bad translation from "活魚を麻痺させて素早く脳死状態とした後にさらに血抜きをし、鮮度を保つ方法[1][2]。" (wiki). |

I'm having a problem with this one. GG5 has two 活け締め entries:
いけじめ: draining the blood from a live fish to keep it fresh (ルミナス has that too, and so does 大辞泉 if I'm reading it correctly.)
いけしめ: (1) making a fish fast for a few days before sale, (2) killing a fish immediately before cooking.
Daijrin has both readings together, and has fasting and fishtank senses.
Koj has いけじめ and just the blood-draining sense.
I suspect they all need a merge, and some "esp. xxx" for readings. |
