<upd_detl>Marcus raised the question in the 但馬牛 entry as to whether we should have "XX cattle" and "XX beef" in the same XX うし entry. I've usually regarded うし as being the animal and ぎゅう the flesh. We have one 牛/うし/ぎゅう entry and have a 《usu. ぎゅう》note on the beef sense.
Do we add "Kobe cattle" here? If so is there one sense or two?  We probably should have a consistent approach,</upd_detl>

<upd_detl>和牛/わぎゅう refers to both but it seems there usually is a cattle/beef distinction with うし and ぎゅう.
The daijr and nikk entries for こうべうし describe the cow only. Daijs only has こうべぎゅう which points to 神戸ビーフ. Might be best to split こうべうし into a separate entry. Or we could have two senses with "esp. -ぎゅう" and "esp. -うし" notes.
As I said on the 和牛 entry, I don't think a food tag is appropriate for these -牛 terms. It's a raw ingredient.</upd_detl>

I don't think there's anything wrong tagging "beef" or various -肉 entries as [food]. Meats could be considered "raw ingredients", sure, but they are particularly cut and prepared from animal flesh to be used as food. Nobody uses words like 鶏肉 or 鶏肉 to talk about the flesh of chicken outside their use as food.</upd_refs>

<upd_detl>I think we'd be expanding the scope of [food] if we added it to those terms. If I'm not mistaken, it's currently restricted to cooking terminology and names of dishes. We don't tag words like ご飯, 砂糖 or 小麦粉 as [food], even though they're not used in any other contexts.</upd_detl>
