空揚げ is "correct" because この食べものが中国の「唐の国」とは直接の関係がない.
However, 現代の実態としては一般に「唐揚げ」と書かれることがたいへん多く.
So it depends whether you want to be prescriptive or descriptive.
The article has a chart which shows that, among older people, both forms are used quite a lot, but with younger generations, 唐揚げ usage is greater by a factor of about 5:1. So 唐揚げ may come to be regarded as "correct" in the future.</upd_detl>
