<upd_detl>This word refers to a particular kind of meat substitute made from gluten, not to gluten or gluten based food products in general.
Moreover, the term "seitan" is mostly used in the West; in Japan this product is usually called グルテンミート.
There are other more traditional gluten based food products in Japan known as 麩.</upd_detl>

<upd_detl>I know Johan dropped the "wheat gluten" gloss in favour of the expl, but I suspect it may be more accurate to say "wheat gluten (esp. meat substitute made from it)" or something like that.</upd_detl>

<upd_detl>Given that "wheat gluten" refers to the actual food (and is used interchangeably with "seitan") I think this should be fine.
Do we need the etymology note? The 正しい-&gt;セイ connection won't be obvious to a lot of people.</upd_detl>
