<upd_detl>Saw as どぼづけ at restaurant; どぼづけ may be 関西弁, but どぶ漬け seems used generally, if more commonly in Kansai.
Etymology seems to be 濁 as in 濁酒(どぶろく), so presumably ×濁漬 with どぼ a corruption.</upd_detl>
