Actually, I asked a Japanese friend (who teaches Japanese at high school) about the sensitivity of some of the words on the list.

She said that the 中華料理/中国料理 thing was news to her, but completely agreed about the 医者/医師 thing. Not even a hint of surprise. She said it 医者 sounded "hard".

I've been keeping my eye on Japanese TV, and there is *definitely* an aversion to using the word 医者 in its standalone form, and not only on NHK. When written, it's 医師, and when spoken, it seems to be 医者さん.
