「コンヴォルヴ」 is in JWN, but the only real web hits are for earrings by the brand Anemone that give the appearance of having one's ears pierced.

The only one of these forms with potential to be an entry is 「コンボルブ」. But web hits (after filtering out 「コンボルブルス」, a plant) are primarily for translated pages. Overall, this is too obscure to warrant an entry. Even the English verb is marked "rare" by ODE.

A majority of refs simply go with two senses how we had it previously. (1. burden; 2. load) sankoku and iwakoku have the medical sense, which is field-specific, so that's worth bringing out. However, only sankoku has a sense for labor specifically. Senses can be split many different ways, but in this case, I think we should go with the majority since it is not strongly present in examples, etc.

This seems to have a plethora of uses, rather difficult to combine them and avoid redundancy at the same time.

I don't think it's expedient to attempt and split the "load" sense into multiple based on field tags. I see this in multiple technical references all with different areas of expertise. Best to have field examples in the gloss instead.
However, I believe the second and third sense should still be separate.

They are supported by refs and can be substantiated by examples. I think that's about all an entry in a dictionary needs.

Well, the kokugos do not have the constraint that they need a PoS tag or else they get a syntax error.

I do think the only instances of a ~ between a stem and suffix are the ones I edited (and I think they are all the せ~ 未然形 + suffix, courtesy of "-nai stem") but the practice of prefixing a ~ to suffixes, etc. in notes predates me by several years. 
I first used the intermediary ~ in either the (ら)れる or (さ)せる entry, which already had a ~ before I added the stem.

That depends on the level of morphosyntactical analysis and the school of thought/philosophy being employed to execute it, as they define where we want our morpheme boundaries to be and how the syntax trees are structured.
If we define our boundaries to be something relatively simple such as semantic content and grammatical function, both are identical in that they consist of a base content verb + a suffix adding grammatical information: 
せぬ = se-nu = do-NEG.NPS
している = shite-iru = do-CONT.NPS 
The morphological structure may then be reflected in the syntax tree (since the stems せ and し, as well as て, have neither semantic content nor overt grammatical function in their current use, they are ignored by this analysis).

Finer levels may take every single root, meaningless stem and particle, or even concepts not overtly realised into their glosses:
せぬ = s-e-n-u-∅ = do-LK-NEG-NPS-PRED

サ変 was chosen over suru-class or something of the sort as it is mildly shorter and refers to the conjugation class as a whole rather than する singularly.
While す・する and サ変 are largely synonymous since the former and its compounds very likely account for 99.9% of the conjugation class, there are very few verbs that occupy that 0.1% position wherein they have the suru-class paradigm, despite having no connection to the actual suru.

I dislike "substandard" even though GG has it. 規格外 seems rather neutral, while "substandard" contains a negative judgement. I think Japanese would prefer something else (低水準, 標準以下, 劣悪, 低品質, 不良品) if that's what was intended, and very limited reverso examples of 規格外=>substandard look like bad translations.

If you image search 規格外の製品, you get only fruits and vegetables, for which "substandard" is an incorrect gloss. For produce, "irregular" works, but "ugly" seems like the correct modern term in news and social media.

Was hard to come up with satisfying glosses to separate this and 専任読手, but I think this is the best as there are currently only 7 専任読手 and they are the only people qualified to read at the 3 big title tournaments, and other than 専任読手 the only reader certifications are A級 and B級公認読手. The English translation of the Chihayafuru manga has "official reader" but I feel like this is ambiguous and makes it even less clear that it's a lower qualification than 専任読手. I wonder what you think.
