If you want to preserve nuance [of 飽きる] in fewer words:
insatiable (for / in) — literary, fits in concise glosses
still unsatisfied — implies “even after having much”
not content / not fully content — neutral but faithful

Regarding the [form] suggestion:
Modern Japanese speakers recognize it easily — it’s not obscure.

But it’s not part of active vocabulary for most people under ~40, unless they write or read literature.

We appear to have the wrong subject.  The "having one's fill" component requires the subject to be human. Ngrams show that even as an adjective, the targets are human (人, 方, etc). Cursory searches on x.com and news show the same pattern. I like this example from x: 現状に飽き足らない心 

飽きる has the nuance of having had one's fill of something but that still not being enough. Just glossing as "unsatisfied" doesn't communicate this nuance.  I think "(still) not" helps a bit. "even after/with xyz, still not satisfied".  

20~30-something college students/graduates reacted with some astonishment when I asked about the meaning.  They said they would *never* use this term themselves (written or otherwise).  It's obviously out there and in use, but [form] might be most accurate (chatgpt seems to think so).  Rare in spoken dialog.
