I have also seen this in the *context* of a trident (something like 三叉の矛, as on wikipedia).

It does not appear that this term would ever be taken to *mean* trident in isolation.  I have proposed two such entries separately: 三叉槍 三叉戟 (compare google image results for either of those, and any kanji entry here).  I have encountered a third , apparently recent coinage, which I am ignoring 三又矛(みつまたほこ)。

Actually, I see no clear support for [1] at all.  both sankoku and daijs give no straight [n] sense for 三つ叉, other than a clothes-drying-related tool, and the plant.

There seem to be some historically "grandfathered" terms with the さんさ reading, all of which we now have in jmdict:
The two spears entries I just added,
trigeminal nerve/neuralgia (三叉神経)
three-way intersection (三叉路)
There is a mountain named 三叉峰 さんしゃみね that we don't have (different reading, しゃ, as well).  

Beyond that, the さんさ reading does not seem to be productive, and doesn't seem to need an entry outside of those terms.  sankoku, for example, gives only 三叉路 and 三叉神経。Otherwise "さんさ" has no dedicated entry.

For new terms, the reading seems to always be みつまた. 
三叉コンセント (three-port outlet) appears to be みつまた, not さんさ.

Magic The Gathering card game decided to use 三叉矛 , which I would have guessed as さんさほこ, but they furigana as みつまたほこ.

Added xrefs to warn about the only two notable reading exceptions, which seems more useful than a generic "sometimes read as さんさ". I'm not arguing that this is a good approach in general(not something I would run around trying to do elsewhere), but for this specific case it seems like a clean approach that eliminates a lot of ambiguity.

If insisting on a standalone noun sense, I think it would be
: any object with three forks, prongs, branches, etc....
But "trident" and "three-pronged fork" seem way too specific and would rarely be correct for a random occurrence of 三つ又. And by relative volume, this is practically never the "subject" of a sentence, which is a final reason I don't think a dedicated [n] entry is needed:

(sorry for the double-post, the whole intention was to keep my edit, and secondarily vote to delete)

ルミネ and GG5 notwithstanding, if there isn't other evidence that this is a "word", I don't think we want to treat every occurrence of a dropped を、で、が、の etc. as a "word" (especially when rare). 

Perhaps I have misread/mis-researched this term, but this is what it appears to me to be.

If it stays, I stand by my suggestion that this have a [note] giving the common form (not sure of the optimal wording).  We can't xref, because ハサミで切る would never pass an obviousness test(nor do I think it should).

Added the xref in place of trying to clarify somehow.  there are lots of "stimulant" entries that have similar (and robust) n-gram counts. This one is notable in that the dictionary specifically uses it in a non-chemical context ("failure is a good motivator"). daijs: その失敗がよい―になった」.  It's also notable for *not* being listed as a "stimulant" term on wikipedia's chemical stimulants page as a synonym.

I am extremely suspicious of glossing this entry as "irritant" (even though you'll find this on weblio, and on other "stimulant" entries).  If it's in the context of "non-刺激剤" or "low-刺激剤", then perhaps low-irritant or non-irritant/anti-irritant makes sense.  But I don't think it would be used as "irritant" in a non-negated context...

Look at this terrible gloss/translation, for example:

The example sentence says 呼吸刺激剤 would be used to *treat* sleep apnea.  It's a respiratory stimulant, not an irritant....

We have an entry for coprolalia.  It is 汚言症, and it is correct.

Search "汚言症", lots of results. Lots on twitter.

Search "醜語症", a handful of medical 和英辞典 entries. Effectively nothing on twitter(a few people found this dictionary entry in 2013 and decided to share for whatever reason).

If you do a google book search instead, you'll find, a couple results with this term in medical texts pre-1910.  There is a book on katakana terms that is more recent and has it(no doubt copied from somewhere else, just has we have).

Basically, even if you can find this in a super-old Japanese text somewhere, I don't think it ever became a word of any importance at all.  We could mark it [rare] and xref.  But jmdictdb makes no effort to include every obscure medical term, and this one is both obscure and wildly obsolete(if it was ever actually used outside of one or two attempted calques from English back-in-the-day).  On balance, I think the world would be better off without the entry.

The article isn't about being "perturbed" so much as "negatively affected in an unsupressable way" by outside stimuli.

If "irritability" is used in an ADHD context in English, it can't be separated from the image of an upset person.  I'm not quite sure this has the same implications in Japanese... but this is beyond me.

What I feel relatively confident about is that laymen don't use this to describe each other as "irritable". (basically non-existant on twitter, mostly a few Chinese references)

I'd mark as [rare], but it's correct as medical jargon.

"retardant" in "flame retardant" (燃焼抑制剤, but there are far more common terms for flame retardant, and fire inhibitor would be fine. Can't imagine where "retardant" would be needed beyond "fire".)

Though, if you search "抑制剤" "retardant" you will get lots of (fire/flame/heat~) hits, so maybe it's worth including. Eh, I guess I'll add it. Trying not to just copy weblio.
