To get rid of the messy restr tags, I propose dropping 掻き上げ, which only applies to archaic/obscure senses. Daijr doesn't even have it. Most (if not all) of the the ngram counts come from the verb.

not sure about that.  at least in koj 6, the relevant sense says '（「掻揚げ」と書く）'.  daijs also has both headwords, but likewise restricts this sense to 掻揚げ.
our own entry for あげる restricts the deep-frying sense to 揚 as well:

if this is going to remain as the only sense in this entry, then i think 上 versions should remain as iK.  if additional senses are added, then the iK can come off, and the tempura sense can be restricted to 揚 versions
