The standard Western spelling for this type of Japanese knife seems to have settled on "petty knife" (effectively a loanword back into English); the references are a bunch of Western knife/cook shops that use and define 'petty knife' that way. (If you google for 'petit knife' it will assume you mistyped 'petty knife'.)

I add "kitchen" to "small knife" because if you don't want the technical cheffy term it's helpful to know that it's specifically a kitchen implement. (Ref: Daijisen defines it as "小形の洋包丁。野菜や果物の皮むき用". I'm amused that there it's defined as a Western-style knife and in the West we define it as a Japanese-style knife, incidentally.)

I've thought about this a bit, and checked our other XX後 entries. Yes, it's highly productive and can be tacked onto almost any event. Entries where we should include it are things like 一死後 where the meaning can't be deduced from the elements. Similarly, for 言葉後 sense 2 makes it a necessary entry.

Others, such as 戦争後 are a bit more doubtful, but even then, I like to bolster the E-J capability, so having a gloss of "post-war" is rather useful. Post-can-opening? probably not. I'd favour dropping it.
