They are both knives that are intended as a main all-around kitchen knife, but they are not the same knife, nor is one a type of the other. The same is true of the bunkabōchō (the predecessor of the santoku), though some people (wrongly) regard it as a type of santoku (if anything, it's the other way around), due to their great similarity.

	Comments:	Yeah, it's very plausible that 牛刀 may have been used for any knife used for red meat, very early on. It's also plausible, that they mistakenly referred to chef's knives, as butchers' knives ...and continued to keep that mistake in dictionaries, long after the mistake was corrected among chefs, knife makers/sellers, and the general public, due to going with the older dictionaries, that have the "butchers' knife" gloss. As for "kitchen knife"... Kitchen knife is a broad category. Kitchen knife doesn't mean chef's knife. While a chefs' knife is a kitchen knife, so is a bread knife, paring knife, utility knife (not to be confused with non-kitchen utility knives. Called a "petty", by the Japanese), carving knife (this includes sashimi knives, like the yanagiba), boning knife, nakiri, usuba etc. Those are all kitchen knives.

(didn't see them as necessary, but if they are, these are some quick examples) Also: Just looking at the pictures, from an image search, and actually looking up info, are two very different things. An image search can give you a quick impression of what a word typically refers to ...but that impression won't necessarily be _reliable or trustworthy._ Also, if you do an image search for "butchers' knife", you get nothing that looks like a chef's knife. You also get a lot of cleavers, though (despite what many believe) those aren't actually butchers' knives. Aside from the fact that butcher's knives look notably different: Knives can look the same, in profile, but be completely different and have completely different things they can or can't do, and for which they are or aren't suited. For example: A Chinese chef's knife looks like a cleaver, but can't cut through bone. A nakiri or usuba (knives for cutting vegetable) look much the same as a nata. (bushcraft/woodcraft knife. A "all-purpose kitchen knife" gloss, means that 文化包丁 refers to any all-purpose kitchen knife. So chef's knives, santoku, bunka, as well as 中華包丁. (I just noticed, that I forgot to ref 中華包丁) Needless to say, it does not. 万能包丁 does, but 文化包丁 and 三徳/三徳包丁 do not. 'We don't usually have "a type of ..." glosses.' Why not? Saying it isn't what you tend to do, isn't an argument for not doing it. It doesn't make any kind of case, for not doing it. Saying "a type of", makes clear that this is a specific type of all-around kitchen knife, rather than an umbrella term for any and all all-around kitchen knives How do you avoid that problem, without "a type of"? And without that solution, being more lengthy? Also, while I get not having all the refs (as I said in the gyūtō entry, I did it because of your inclusion of a ref there, and attempting to adjusting things to make that work, as you appeared to suggest), I don't really get why bunka and santoku wouldn't ref each other. They are very similar, with the only real difference being the tip. (there are some other points where they _tend_ to differ, but which are only tendencies, with countless counterexamples. The tip is the one and only defining difference) And from the 万能包丁 entry (why it was mentioned there, rather than here, I have no idea): "bunka knife 0" What do you mean by that? It's certainly not an indication of search results, as you get plenty of those. It certainly isn't a _common_ term, but to say it isn't used in English, at all...

If my edit can be rejected, because I didn't make a case for it, then you cannot reject it (after a clear and thorough case for it, being presented), without any hint of a case, for the rejection. Also, while I get not having all the refs (as I said in the gyūtō entry, I did it because of your inclusion of a ref there, and attempting to adjusting things to make that work, as you appeared to suggest), I don't really get why bunka and santoku wouldn't ref each other. They are very similar, with the only real difference being the tip. (there are some other points where they _tend_ to differ, but which are only tendencies, with countless counterexamples. The tip is the one and only defining difference) And from the 万能包丁 entry (why it was mentioned there, rather than here, I have no idea): "bunka knife 0" What do you mean by that? It's certainly not an indication of search results, as you get plenty of those. It certainly isn't a _common_ term, but to say it isn't used in English, at all...

GG5 has two 活け締め entries: いけじめ: draining the blood from a live fish to keep it fresh (ルミナス has that too, and so does 大辞泉 if I'm reading it correctly.) いけしめ: (1) making a fish fast for a few days before sale, (2) killing a fish immediately before cooking. Daijrin has both readings together, and has fasting and fishtank senses. Koj has いけじめ and just the blood-draining sense. I suspect they all need a merge, and some "esp. xxx" for readings.

	Comments:	The standard Western spelling for this type of Japanese knife seems to have settled on "petty knife" (effectively a loanword back into English); the references are a bunch of Western knife/cook shops that use and define 'petty knife' that way. (If you google for 'petit knife' it will assume you mistyped 'petty knife'.) I add "kitchen" to "small knife" because if you don't want the technical cheffy term it's helpful to know that it's specifically a kitchen implement. (Ref: Daijisen defines it as "小形の洋包丁。野菜や果物の皮むき用". I'm amused that there it's defined as a Western-style knife and in the West we define it as a Japanese-style knife, incidentally.)
