I think we should mention it.
Refers to the technique as well as the food. |

meikyo and daijs say coated in flour or starch,
daijr says 何もつけないで,または小麦粉やかたくり粉を軽くまぶして油で揚げること
we could mention it but it might be messy. but KFC chicken wouldn't be called 唐揚げ |

out of the first 11 recipes listed for the searchword か
らあげ, 10 are deep-fried chicken recipes. Out of these,
only one specifies "鶏のから揚げ". The only non-chicken
recipe specifies it's "タコの道具(内臓)の唐揚げ" |
|
Comments: |
Didn't get the rationale for removing the mention of the
chicken. When I try google images, it all looks very much
like fried chicken to me, no potatoes or anything else. |

Yes, although within limits. If an "incorrect" kanji is actually more common, I don't think it should go first. |

I guess that, by relying of Google n-grams, you are, in effect, choosing to be descriptive rather than prescriptive. |

Google Verbatim search results:
"唐揚げ" - About 19,900,000 results
"空揚げ" - About 2,810,000 results ... and they ask: Did you mean: "唐揚げ"
.
According to this article
http://www.nhk.or.jp/bunken/summary/kotoba/term/134.html
空揚げ is "correct" because この食べものが中国の「唐の国」とは直接の関係がない.
However, 現代の実態としては一般に「唐揚げ」と書かれることがたいへん多く.
So it depends whether you want to be prescriptive or descriptive.
The article has a chart which shows that, among older people, both forms are used quite a lot, but with younger generations, 唐揚げ usage is greater by a factor of about 5:1. So 唐揚げ may come to be regarded as "correct" in the future. |

No clear way to do it. Interesting that 空揚げ trails, because all my refs have it first. |
