Yes, Daijirin gives the source as "スペイン tacos", which is indeed the plural. Most of the JEs gloss it as the singular "taco". I think we should too.

Perhaps the English plural form was used as a model for the Japanese loanword in order to distinguish it from タコ
(octopus) — just my speculation :-) — rather than to express plurality.

"taco" は可算名詞ですので、いずれもお考えの通りだと思います。複数形 "tacos" の英語での発音については、以下のオンライン辞書[Merriam-
Webster]で確認できます。敢えてカナで書くなら、「タコズ」というよりは「ターコゥズ」に近いかと。
なお、語源であるスペイン語でも、単数形は "taco"、複数形は "tacos" なのですが、スペイン語の s は[s] としか読まないため、複数形は「タコズ」では
なく「タコス」となります（日本語にはこの複数形がそのまま入って来ている訳ですね）。
