separately), but this is pronounced as しょゆう or しょゆ by pretty
much everybody in my vicinity (in northern Osaka), which
always trips me up when I try and type it. And I guess most
often with the お- prefix. Intonation of course plays it part

<upd_detl>At first I thought せうゆ might have been 旧仮名遣い for 醤油 but I see that's シヤウ in all the kokugos. せうゆ in fact is not in any kokugos, but the Q/A quoted seems to indicate that it is an old reading - it's an interesting discussion.
We don't usually include 旧仮名遣い but I think せうゆ can probably stay as "old kana".</upd_detl>
