I think it's more a case of the "-o'-" sound being absorbed into the ク than of the term being derived from a non-standard English version. The Japanese wikipedia page mentions it as a variant of ジャック・オー・ランタン, etc.

I think the forms containing オ(ー) should be kept separate. ジャックランタン is arguably an abbreviation.
